Basil is a wonderful spice that we planted in the garden behind the house. With its licorice-clove flavor, we find ways to add it to all of our meals! Whatever is leftover, we turn into a pesto (vegan) to use for future toppings. Delicious! Our favorite recipe: Vegan Pesto

  • 3 cups basil moderately packed

  • juice of one small-medium lemon

  • 1/3 cup pine nuts

  • 2 large garlic cloves peeled and roughly chopped

  • 3/4 tsp kosher salt

  • 1/4 cup extra virgin olive oil

You blend these ingredients in a processor until you get a creamy consistency and apply to toast, pasta, potatoes, or any of your favorite bases!
